Pancakes

One of our favourite ways to enjoy balsamic in the morning is on pancakes! Vegan pancakes are quick and oh so delicious! 

Ingredients

150 grams plain flour
2 tsps. baking powder
3 tbsps. golden caster sugar
400 ml. can of coconut milk, shaken well
Vegan Premium Butter Olive Oil
4 strawberries, thinly sliced
Your Favourite Balsamic Vinegar.

Directions

  1. Sift the flour and baking powder into a bowl, and stir in 2 tbsps. of the sugar and a pinch of salt.
  2. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated. Stir the milk slowly into the flour mixture to make a smooth batter.
  3. Heat a shallow frying pan or flat griddle and brush it with oil. Use 2 tbsps. of batter to make each pancake, frying two at a time – any more will make it difficult to flip.
  4. Once cooked top with sliced strawberries and your fav balsamic!
