Apple Cinnamon Quinoa Breakfast Porridge
Mornings can sometimes be so busy but I always try to fit in a healthy and hearty breakfast to kick start the day! Apple Cinnamon Quinoa Breakfast Porridge is just perfect for today. Before you start the key is to soak the quinoa for at least one hour before cooking, I prefer soaking it over night(it takes the bitterness away)
1 cup quinoa, soaked in water for at least one hour or overnight
2 cups water
1 tsp. ground cinnamon
1tsp. vanilla extract
3 tbsps. all-natural aged maple balsamic vinegar
1/2 cup or 1 cup almond milk, as desired for texture and creaminess,
An apple; sliced
Nuts of your choice.
- Drain the quinoa, discarding the water.
- Combine the 2 cups of water and quinoa in a small saucepan over high heat, bringing it to a boil. Lower the heat, covering the saucepan and cook the quinoa until the water is absorbed, approx. 15 mins.
- Stir in the ground cinnamon, maple balsamic, vanilla and as much almond milk as desired.
- Top with your apple slices, and nuts (optional)
